Blueberry Yoghurt Loaf

This blueberry yoghurt loaf is great for picnics with your family, or even popping a small slice in your kids' lunch boxes.

Ingredients:

  • ​125g Butter

  • 3/4 cups Raw sugar

  • 2 large Eggs, lightly beaten

  • 1 and 1/2 cups of Self-raising flour

  • 1/2 cup of Maleny Dairies Natural Yoghurt

  • 2 tsp Lemond rind, finely grated

  • 1 cup Blueberries, fresh or frozen

  • Icing sugar for dusting

Method:

  1. ​Preheat over to 180°C.

  2. Grease and line pan with baking paper.

  3. Combine butter and sugar in a bowl using an electric mixer and beat until pale and creamy.

  4. Add eggs one at a time until well mixed.

  5. Alternate folding the flour in and teh yoghurt in.

  6. Add the lemon rind once fully combined and mixture is smooth.

  7. Fold in the berries and spoon into the prepared pan .

  8. Bake for 1 hour or until an insetred skewer comes out clean.

  9. Allow to cool for 10 minutes.

  10. Dust with icing sugar.
