Mrs Fielders' Famous Sponge Cake
Light, airy and made with love – this classic sponge cake has stood the test of time and
continues to delight generations.
Ingredients:

3 eggs separated – MUST be at room temperature

pinch salt

1/4 teaspoon vanilla essence

1/2 cup caster sugar

2/3 cup cornflour

1 slightly rounded tablespoon plain flour

1 level teaspoon baking powder​

Method:

Pre-heat oven to 190C. Line tin with paper, spray with oil and dust with cornflour

Beat egg whites with salt until soft peaks form.

Gradually beat in sugar a little at a time then continue to beat until stiff.

Add egg yolks and vanilla essence, beat until combined.

Sift together 3 times cornflour, flour and baking powder then add to egg mixture. Carefully and lightly fold mixture together using a wooden spoon or spatula. Do not stir.

Divide batter between two greased and lightly floured 20cm round cake tins and bake 18-20mins.

Once cooled, spread a thin layer of strawberry jam, fill and top with Maleny Dairies whipped cream and fresh strawberries.
